Hi Trish
I am happy to discover there is a significant vegan community in our small town and a place where you share and eat. I love to cook and eat, too. I would be interested in the potluck and other community efforts to support vegan and wholesome food habits. Please feel free to add me on your mailing list.
Take care, Junga

Thanks for the suggestion, Cathy! I was thinking of subbing in the olive oil, as well. Maybe next time I'll give it a shot with the 1/4 cup and see how that goes. You know, I don't think I've ever had chestnuts, before ... will have to try, sometime soon!

This sounds exactly like the stuffing I'm going to make, except I'm adding chestnuts! Love Field Roast apple sage sausages. You asked about not using the margarine – I think you need oil, but I'd suggest extra virgin olive oil which is a bit more heart-healthy, and cut it down to 1/4 cup.

Hi Serena! Glad you liked the mac n cheese! We made it again Tuesday night, with penne pasta. Delicious. :-)

I haven't tried Dashi yet, but I've seen things about it on Facebook. I'll have to add it to my list of places to try. I love that they specifically mention if things can be made vegan or gluten-free. Takes out all the guessing work and means they actually think about that kind of thing! Awesome.

Yum! Kyle and I both enjoyed the mac n cheese, thanks for posting the recipe. Sometimes to sneak in a little extra nutrition, I like to cook and puree 1/4 of a butternut or kabocha squash and stir it into the cheese sauce.

Speaking of pasta...have you tried the Dashi Noodle Bar? They just opened up and I noticed they have V for vegan items on their menu online...
