• Spinach Linguine with Edamame Pesto

    There aren’t many things that I could eat on a regular basis and not get sick of. In fact, I can only name two: oatmeal with berries and this amazing concoction from the PPK. Since Ty refuses to give this dish a try, I spend an entire week consuming the leftovers for lunches and dinners. And I can’t complain — it’s just that good.

    When it comes to pesto in general, I’m a moderate fan. I love it on things like a sandwich made with foccacia bread or on a pizza, but I’m not super big on pesto with pasta. This pesto, however, is way different from “normal” pesto. There’s hardly any oil and it’s creamy and full of flavor. Toss it with some spinach pasta (of any shape, really) and some sauteed cremini mushrooms and red onions, and you’ve got my attention.
