• Quinoa with Tempeh

    I’m always trying to figure out new things to do with quinoa. This dish actually caught me by surprise, though. I was flipping through my new copy of Appetite for Reduction one afternoon, trying to figure out what to make for lunch. In the back of the book, Isa has a list of different “bowl” combinations, which usually include a grain (rice, quinoa, etc.), some veggies, maybe some tofu or tempeh, and a dressing which can be found in the book.

    This particular bowl combination called for quinoa, broccoli, some tempeh (recipe from her book), and a peanut dragon dressing. I’m a huge fan of anything peanut-related, so I though I’d give this a shot. I didn’t have the stuff for making her tempeh recipe, but I did have a package of sesame marinated tempeh on hand. And my only alteration to the dressing was to leave out whatever ingredient made it dragon-like; I’m not a fan of heat.

    Toss it all in a bowl (um, a big bowl) and there you go! She doesn’t specify any amounts for the quinoa, broccoli and tempeh, so personal preference comes in, there. The bowl I made was huge and pretty much impossible to finish. Still working on portion sizes, over here … but at least I measured!
