Okay, yum. These things are divine. I made them for a cookie exchange that we had at my work, to celebrate some birthdays. Several people in our office are gluten-intolerant, so I decided to try to make something that everyone could have.
The bites were generally liked, though I had a ton of them left over, since it makes a huge batch. By the time I got to the end, I was fairly tired of them. But you know … you really can’t go wrong with mini pieces of pumpkin pie!
My only variation was that I forgot to look for crystallized ginger, so I tried to fudge the topping a bit to make up for it, which didn’t turn out amazing. I think a more crumb-like topping would be good, actually. I’ll keep that in mind, for the next time I make these.
